There is a particular kind of magic that happens when a meal is prepared not for a dining room full of strangers, but for a small group of people who matter to each other. Private dining, at its best, is not simply a restaurant experience relocated to a home — it is something altogether more intimate, more personal, and more memorable.
Over the past decade, I have had the privilege of cooking for clients in some of the most extraordinary settings imaginable — from royal residences to superyachts, from country estates to city penthouses. And while the settings have varied enormously, the principle has always been the same: the best dining experiences are the ones that feel effortless.
Effortless, of course, does not mean simple. Behind every seamless evening lies hours of planning, sourcing, preparation, and attention to detail. The menu must reflect the tastes and preferences of the guests. The ingredients must be the finest available. The timing must be precise. The presentation must be beautiful without being fussy. And the atmosphere must feel warm, relaxed, and genuinely hospitable.
What makes private dining different from a restaurant is the absence of compromise. There is no fixed menu to choose from — the menu is designed entirely around you. There are no other tables, no background noise, no waiting for service. Every moment is considered, every course is personal, and every guest feels like the only person in the room.
This is what I mean by the art of private dining. It is not about showing off technical skill or creating Instagram-worthy plates — although both of those things may happen naturally. It is about understanding what makes an occasion meaningful to the people at the table, and then creating a culinary experience that honours that meaning.
The conversation always begins long before the first course is served. I want to know about the occasion, the guests, the setting. I want to understand dietary preferences and allergies, of course, but also the less tangible things — the mood, the memories, the flavours that hold personal significance. A great menu tells a story, and the best stories are the ones that resonate with the people hearing them.
